Blueberry cheesecake baked oats

🧾 Ingredients (serves 4)

•  1½ cups rolled oats

•  1 cup milk (dairy or plant-based)

•  ½ cup Greek yogurt or cream cheese

•  ¼ cup maple syrup or honey

•  1 tsp vanilla extract

•  1 tsp baking powder

•  Pinch of salt

•  ½ cup fresh or frozen blueberries

•  Optional: 2 tbsp crushed digestive biscuits or graham crackers for topping

 

 

Method

1.  Blend the base

  ⁠◦  In a blender, combine oats, milk, yogurt/cream cheese, sweetener, vanilla, baking powder, and salt.

  ⁠◦  Blend until smooth.

2.  Add blueberries

  ⁠◦  Fold in blueberries gently.

  ⁠◦  Pour mixture into greased ramekins or a baking dish.

3.  Bake

  ⁠◦  Preheat oven to 180°C (350°F).

  ⁠◦  Bake for 25–30 minutes until set and golden on top.

4.  Cool and serve

  ⁠◦  Let it rest for 5 minutes.

  ⁠◦  Top with crushed biscuits or extra berries if desired.

💡 Tips

  For a cheesecake swirl, drop spoonfuls of cream cheese into the batter before baking.

  Use ripe bananas for added sweetness and moisture.

  Want it extra creamy? Add a splash of coconut milk or a dollop of mascarpone.

  Store leftovers in the fridge and reheat with a splash of milk.
