Marry me beans
🧾 Ingredients (serves 4)
• 2 cans white beans (e.g. cannellini or butter beans), drained and rinsed
• 1 tbsp olive oil
• 3 cloves garlic, minced
• ½ tsp red pepper flakes (adjust to taste)
• 1 tsp dried oregano
• ½ tsp smoked paprika (optional)
• ½ cup sun-dried tomatoes, chopped
• ½ cup vegetable broth
• ½ cup heavy cream or coconut cream
• ¼ cup grated parmesan or nutritional yeast (for vegan option)
• Salt and pepper to taste
• Fresh basil or parsley for garnish
Method
1. Sauté aromatics
◦ Heat olive oil in a pan over medium heat.
◦ Add garlic, red pepper flakes, oregano, and paprika. Sauté until fragrant.
2. Add tomatoes & beans
◦ Stir in sun-dried tomatoes and white beans.
◦ Cook for 2–3 minutes to coat beans in the spices.
3. Simmer sauce
◦ Pour in vegetable broth and cream.
◦ Simmer for 5–7 minutes until slightly thickened.
4. Finish & serve
◦ Stir in parmesan or nutritional yeast.
◦ Season with salt and pepper.
◦ Garnish with fresh herbs and serve warm.
💡 Tips
• Serve over toasted sourdough, pasta, or rice for a heartier meal.
• Add spinach or kale for extra greens.
• For a smoky twist, stir in a spoonful of chipotle paste.
• Make it vegan by using coconut cream and nutritional yeast.
