Banana oat pancakes

🧾 Ingredients (Serves 4)

•  2 ripe bananas (medium-sized)

•  2 cups rolled oats

•  1½ cups milk (dairy or plant-based)

•  2 eggs

•  1 tsp baking powder

•  ½ tsp cinnamon (optional)

•  Pinch of salt

•  Butter or oil for cooking

 

 Method

1.  Blend batter  

◦ Add bananas, oats, milk, eggs, baking powder, cinnamon, and salt to a blender.  

â—¦ Blend until smooth and creamy.

2.  Rest batter  

◦ Let sit for 5–10 minutes to thicken slightly.  

â—¦ Meanwhile, preheat a non-stick pan over medium heat.

3.  Cook pancakes  

◦ Lightly grease the pan with butter or oil.  

◦ Pour ¼ cup batter per pancake; cook until bubbles form and edges set (2–3 mins).  

◦ Flip and cook another 1–2 mins until golden.

4.  Serve warm  

◦ Stack pancakes and top with honey, yogurt, or fresh fruit.  

â—¦ Optional: dust with cinnamon or drizzle nut butter.

💡 Tips

•  For extra fluffiness, add ½ tsp baking soda and a splash of lemon juice.

•  Want it egg-free? Replace eggs with 2 tbsp chia seeds soaked in 6 tbsp water.

•  Use frozen bananas for a creamier texture—just thaw slightly before blending.

•  Make it savory: skip cinnamon and add chopped herbs or cheese to the batter.
