Classic Cheese Pizza

Ingredients (serves 4)
For the dough:
- 2 cups all-purpose flour
- 1 tsp instant yeast
- ¾ cup warm water
- 1 tbsp olive oil
- ½ tsp salt
For the sauce:
- ½ cup canned crushed tomatoes
- 1 clove garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
For the topping:
- 1½ cups shredded mozzarella cheese
- Optional: grated Parmesan, fresh basil, chili flakes
Method
1. Make the dough
○ In a bowl, mix flour, yeast, salt, and warm water. Add olive oil and knead until smooth (about 8–10 minutes). Cover and let rise for 1–2 hours until doubled.

2. Prepare the sauce
○ In a small pan, heat a splash of olive oil. Sauté garlic briefly, then add crushed tomatoes and oregano. Simmer for 10–15 minutes until slightly thickened. Season to taste.

3. Shape the dough
○ Preheat oven to 220°C (425°F). Punch down the dough and roll into a 10–12 inch circle. Transfer to a lightly oiled baking tray or pizza stone.

4. Assemble the pizza
○ Spread a thin layer of sauce over the dough. Sprinkle mozzarella evenly. Add any optional toppings.

5. Bake
○ Bake for 12–15 minutes until the crust is golden and cheese is bubbling. Let cool slightly before slicing.

💡 Tips
- For crispier crust, preheat the tray or stone before placing the pizza.
- Use part-skim mozzarella for less grease and better melt.
- Add fresh basil after baking for a burst of flavor.
- Dough can be made ahead and refrigerated overnight for better texture.
