Blueberry cheesecake baked oats
🧾 Ingredients (serves 4)
• 1½ cups rolled oats
• 1 cup milk (dairy or plant-based)
• ½ cup Greek yogurt or cream cheese
• ¼ cup maple syrup or honey
• 1 tsp vanilla extract
• 1 tsp baking powder
• Pinch of salt
• ½ cup fresh or frozen blueberries
• Optional: 2 tbsp crushed digestive biscuits or graham crackers for topping
Method
1. Blend the base
◦ In a blender, combine oats, milk, yogurt/cream cheese, sweetener, vanilla, baking powder, and salt.
◦ Blend until smooth.
2. Add blueberries
◦ Fold in blueberries gently.
◦ Pour mixture into greased ramekins or a baking dish.
3. Bake
◦ Preheat oven to 180°C (350°F).
◦ Bake for 25–30 minutes until set and golden on top.
4. Cool and serve
◦ Let it rest for 5 minutes.
◦ Top with crushed biscuits or extra berries if desired.

• For a cheesecake swirl, drop spoonfuls of cream cheese into the batter before baking.
• Use ripe bananas for added sweetness and moisture.
