🧾 Ingredients (serves 4)
• 2 large cucumbers, thinly sliced
• 1 cup cottage cheese (full-fat or low-fat)
• 2 tbsp plain yogurt or sour cream (optional for extra creaminess)
• 1 tbsp lemon juice or white vinegar
• 1 tbsp chopped fresh dill (or ½ tsp dried dill)
• Salt and pepper to taste
• 1 small garlic clove, finely grated (optional)
• ¼ small red onion, thinly sliced (optional for crunch and color)
Method
1. Prep cucumbers
◦ Slice cucumbers thinly and sprinkle with a pinch of salt.
◦ Let sit for 10 minutes, then gently squeeze out excess water.
2. Mix dressing
◦ In a bowl, combine cottage cheese, yogurt/sour cream (if using), lemon juice, dill, garlic, salt, and pepper.
◦ Stir until smooth and creamy.
3. Combine
◦ Add cucumbers and red onion to the dressing.
◦ Toss gently to coat.
4. Chill & serve
