Creamy cucumber salad with cottage cheese

🧾 Ingredients (serves 4)

  2 large cucumbers, thinly sliced

  1 cup cottage cheese (full-fat or low-fat)

  2 tbsp plain yogurt or sour cream (optional for extra creaminess)

  1 tbsp lemon juice or white vinegar

  1 tbsp chopped fresh dill (or ½ tsp dried dill)

  Salt and pepper to taste

  1 small garlic clove, finely grated (optional)

  ¼ small red onion, thinly sliced (optional for crunch and color)

 

 

Method

1.  Prep cucumbers  

⁠◦ Slice cucumbers thinly and sprinkle with a pinch of salt.  

⁠◦ Let sit for 10 minutes, then gently squeeze out excess water.

2.  Mix dressing  

⁠◦ In a bowl, combine cottage cheese, yogurt/sour cream (if using), lemon juice, dill, garlic, salt, and pepper.  

⁠◦ Stir until smooth and creamy.

3.  Combine  

⁠◦ Add cucumbers and red onion to the dressing.  

⁠◦ Toss gently to coat.

4.  Chill & serve  

⁠◦ Refrigerate for 15–30 minutes before serving for best flavor.  

⁠◦ Garnish with extra dill or cracked pepper if desired.

💡 Tips

  For a smoother texture, pulse the cottage cheese in a blender briefly before mixing.

  Add chopped walnuts or sunflower seeds for crunch.

  Swap dill with mint or parsley for a fresh twist.

  Great as a side dish for grilled meats or as a light lunch with toast.
