Marry me beans

🧾 Ingredients (serves 4)

  2 cans white beans (e.g. cannellini or butter beans), drained and rinsed

  1 tbsp olive oil

  3 cloves garlic, minced

  ½ tsp red pepper flakes (adjust to taste)

  1 tsp dried oregano

  ½ tsp smoked paprika (optional)

  ½ cup sun-dried tomatoes, chopped

  ½ cup vegetable broth

  ½ cup heavy cream or coconut cream

  ¼ cup grated parmesan or nutritional yeast (for vegan option)

  Salt and pepper to taste

  Fresh basil or parsley for garnish

 

 Method

1.  Sauté aromatics  

⁠◦ Heat olive oil in a pan over medium heat.  

⁠◦ Add garlic, red pepper flakes, oregano, and paprika. Sauté until fragrant.

2.  Add tomatoes & beans  

⁠◦ Stir in sun-dried tomatoes and white beans.  

⁠◦ Cook for 2–3 minutes to coat beans in the spices.

3.  Simmer sauce  

⁠◦ Pour in vegetable broth and cream.  

⁠◦ Simmer for 5–7 minutes until slightly thickened.

4.  Finish & serve  

⁠◦ Stir in parmesan or nutritional yeast.  

⁠◦ Season with salt and pepper.  

⁠◦ Garnish with fresh herbs and serve warm.

💡 Tips

  Serve over toasted sourdough, pasta, or rice for a heartier meal.

  Add spinach or kale for extra greens.

  For a smoky twist, stir in a spoonful of chipotle paste.

  Make it vegan by using coconut cream and nutritional yeast.
