Wantan mee (Dry style)
🧾 Ingredients (serves 4)
For the noodles & sauce:
• 400g fresh egg noodles
• 4 tbsp soy sauce
• 2 tbsp oyster sauce
• 2 tbsp dark soy sauce
• 2 tsp sesame oil
• 2 tsp sugar
• ½ cup hot water or chicken broth
• White pepper to taste
For the wantans:
• 150g minced pork or chicken
• 50g shrimp, finely chopped
• 1 tsp soy sauce
• ½ tsp sesame oil
• ½ tsp cornstarch
• 16 wantan wrappers
For the toppings:
• 200g char siu (Chinese BBQ pork), sliced
• Choy sum or bok choy, blanched
• Fried shallots (optional)
• Pickled green chilies (optional)
Method
1. Prepare the wantan filling:
◦ Mix minced meat, shrimp, soy sauce, sesame oil, and cornstarch.
◦ Chill for 15 minutes to firm up.
2. Wrap and cook wantans:
◦ Place 1 tsp filling in each wantan wrapper.
◦ Fold and seal edges with water.
◦ Boil in water until they float (about 3–4 minutes).
◦ Drain and set aside.
3. Prepare the sauce:
◦ Mix soy sauces, oyster sauce, sesame oil, sugar, and hot water or broth.
◦ Stir until sugar dissolves. Adjust seasoning with white pepper.
4. Cook the noodles:
◦ Boil egg noodles until just tender (30–45 seconds).
◦ Rinse briefly in cold water, then dip back into hot water.
◦ Drain and toss in prepared sauce.
5. Assemble and serve:
◦ Divide noodles into 4 bowls.
◦ Top with char siu slices, blanched greens, and wantans.
◦ Garnish with fried shallots and pickled chilies if desired.
💡 Tips
• Use thin, springy egg noodles for authentic texture.
• Double boil the noodles (hot–cold–hot) for better chewiness.
• Wantans can be steamed or fried for variation.
• Add a spoonful of chili oil or sambal for extra heat.
• Prep sauce in advance and tweak sweetness or saltiness to taste.
